As a rule, sknife knives only wear down at the front. sknife has therefore developed a special two-stage sharpening device for this purpose. Use stage 1 (on the left of the sharpening device) to pre-sharpen the blade: run the blade through approximately 10 times. Then test the sharpness of the cutting edge using the fingernail test or a sheet of paper. Stage 2 is used to polish the cutting edge (again, run the blade through approx. 10 times).
To achieve this perfect finish on the knife blade, sknife has had extra-fine polishing stones specially manufactured in Japan. The pre-sharpening stone and the polishing stone in the sharpening device produce a finish equivalent to that of a 2'000-grit whetstone.
